Morning delight: baked oatmeal

It’s kind of like a big oatmeal cookie for breakfast.

And though I first posted this recipe about a year ago, I thought it was time to share it again. It’s yummy — for breakfast or any time. And here’s a tasty tip: if you have leftovers, save it to reheat later in the day and crumble over vanilla ice cream. Yum!

 

Farmgirl’s Baked Oatmeal

Mix together:
3/4 cup brown sugar
1/2 cup butter
2 eggs
2 cups milk

Stir together with a fork, then add to sugar mixture:
2 tsp. baking powder
1 teaspoon salt

Add:
3 cups quick-cooking oats
Optional: dried fruits like raisins, dates or cherries; and chopped nuts

Pour mixture into a 13×9-inch casserole that has been sprayed with vegetable cooking spray. Bake at 375 degrees for 25 minutes. This can also be prepared in small ramekins for individual servings.
