Do the Macaroni Macarena
This is the best macaroni salad recipe ever.
And because it’s the end of what seems a very long week, you may not feel like cooking for a crowd. You may lack pep in your step.
So first, you’ll need to turn up your speakers and turn on the Macarena. It’s the perfect tempo for macaroni salad makin’. You can call it Macarena Macaroni. Delicious and fun to say.
Also, if your kids are helping in the kitchen, they will think it’s really cool if you can do this dance while cooking.
Trust me, I know this to be fact.
(I told you it’s been a long week!)
Rebekah’s Macaroni Salad
2 lbs. elbow macaroni pasta
6 hard-boiled eggs
1 1/2 cups mayonnaise
1/2 cup sugar
3 Tablespoons mustard
2 Tablespoons vinegar
1 Tablespoon Italian Dressing
1/4 cup milk
1 cup diced celery
1/4 c. onion, grated
1 teaspoon paprika
Combine all dressing ingredients except eggs. Pour over cooked macaroni. Stir in the eggs.
Garnish with egg slices or fresh parsley.
First, you’ll need to hard-boil six eggs and boil the macaroni. While that’s taking place, make the dressing.
Dice celery and grate onion.
Mix dressing ingredients in a separate bowl.
When pasta is al dente, add celery and onion. Then pour in the dressing. Gently combine.
Gently fold in chopped hard-boiled eggs.
Refrigerate until ready to serve.
Have a great Memorial weekend. While you’re doing the Macarena, grilling burgers or getting together with family, don’t forget the most important part of Memorial Day … remember!
