Pumpkin-Oatmeal Cookies

Who says pumpkin’s just for autumn?
I’m still working on my pantry transformation. The first step is to empty the pantry so I can paint and preen. After making these sweet treats, I am officially out of chocolate chips and pumpkin. There’s such tasty satisfaction in reaching toward this particular goal!

Farmgirl’s Pumpkin-Oatmeal Cookies
(Makes about 10 dozen)

Cream together:
1-1/2 cups butter
1 cup sugar
2 cups brown sugar

Add, beating until fluffy:
2 eggs
1 teaspoon vanilla

Sift dry ingredients together (except oatmeal), then add alternately with the pumpkin:
4 cups flour
2 teaspoons baking soda
1 tsp. salt
1-1/2 teaspoons ground cinnamon
2 cups quick oatmeal
1-3/4 cups canned pumpkin

Preheat oven to 350 degrees. After mixing above ingredients, add in oatmeal and stir to combine. Then stir in:
1 cup chocolate chips

Drop by spoonful onto a non-stick baking sheets. Bake at 350 degrees for 10-12 minutes.
