Butterscotch Sweety Pie

My oldest sweetie made this pie for supper one night … and it was good. Very, very good.

Butterscotch Sweetie Pie


  • 1 cup packed light brown sugar
  • 4 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 egg yolks, beaten
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie crust, baked


  1. In top of double boiler combine brown sugar, cornstarch, salt and milk.
  2. Stir and keep stirring until it thickens.
  3. Mix in egg yolks, stir and keep cooking until it thickens.
  4. Remove from heat, and add butter and vanilla. Keep stirring until smooth.
  5. Pour into cooked pie crust. Bake at 400 degrees F for 5 minutes or until browned and set.
  6. Cool. Serve with whipped cream. Yum!

    I love butterscotch pie and honestly have not had it in years. How wonderful to have a special cook in the house!
