Thankful for Sweet Pumpkin Soup
Sweet Pumpkin Soup
3 cups scalded milk (heat milk and 2 Tbsp. butter in stock pot until just before boiling, stirring constantly)
Add 3 cups roasted and pureed fresh pumpkin.
Combine the following dry ingredients and add to the liquid and pumpkin mixture:
2 Tbsp. brown sugar
1 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt
1 Tbsp. flour
Heat in saucepan until thickened. Garnish with toasted pumpkin seeds.
Serve alone or try it with gingerbread!
