This is Grandma’s recipe and she made it a lot. Sometimes she served it with a dusting of powdered sugar; occasionally she made a quick caramel sauce to drizzle on top. More often than not she served it plain to hungry grandchildren and Grandpa. She called him Bud and he called her Toots (like Tootsie). Spring is here and I’m missing them both. It’s a good day to make her apple cake recipe and savor the flavor of homemade memories. Enjoy!


Sara Manfull’s Apple Cake


  • 4 cups diced apples
  • 2 eggs
  • 1 cup walnuts
  • 1/2 cup vegetable oil
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla


  • Combine diced apples and eggs in large mixing bowl.
  • Add nuts, oil and sugar. Mix to combine.
  • Sift together flour, soda, cinnamon and salt. Add to the wet mixture.
  • Mix in vanilla.
  • Pour batter into a 9" x 13" baking dish.
  • Bake at 350 degrees for one hour or until a toothpick inserted in the center is clean.
  • Serve as is or dust with powdered sugar.
