Sweet Pumpkin Soup

Sweet Pumpkin SoupThis is an easy recipe that will warm your taste buds and your heart. It’s best made with fresh-roasted pumpkin — surely you have a leftover pie pumpkin sitting around somewhere? Just roast on a sheet pan in the oven until tender, scoop the tasty pumpkin from the rind, and puree in a food processor. Or, use canned pumpkin puree if you must! A hint of brown sugar adds simple, sweet depth to this tasty dish!


Sweet Pumpkin Soup
  • 3 cups scalded milk
  • 3 cups roasted and pureed fresh pumpkin (use canned if you must)
  • 2 Tbsp. brown sugar
  • 1 tsp. cinnamon
  • ½ tsp. ginger
  • ½ tsp. salt
  • 1 Tbsp. flour
  1. Heat milk and 2 Tbsp. butter in stock pot until just before boiling, stirring constantly.
  2. Add 3 cups roasted and pureed fresh pumpkin.
  3. Combine dry ingredients and add to the liquid and pumpkin mixture.
  4. Heat in stock pot until thickened. Garnish with toasted pumpkin seeds.
  5. Serve alone or try it with gingerbread!
