5 Simple Soup Recipes
Busy weeknights and jam-packed weekends require extra planning in the meal department. Yes, we may be running all over tarnation, but I still demand 10 minutes to sit down and eat together as a family. The simple solution? Soup. Not only is it relatively quick and easy to prepare, you can make it ahead of time (see, that’s the key!) and heat when you’re ready to eat. I make soup at least once a week. It’s usually a concoction of found ingredients and whatever meat I happen to have thawed in the refrigerator. I’ve yet to add a stone to our soup — that’s the good news!
Here are five of my favorites. They’re relatively simple, and the best part is you don’t have to follow the rules. If you want to add a swirl of sriracha be my guest. Decide beets would be best? Have at it (though I certainly don’t know why you’d add beets!) Point is, soup is simple because it allows you to color outside of the lines. And I’m a big fan of that philosophy. So grab a pot, keep calm and soup on, friends!
