These cookies speak the language of love, pure and simple. As I write, my favorite people in the world happen to be out in the forest, gathering wood for winter. Well, maybe forest  isn’t the correct term. But seriously, the hubby is cutting downed and dead trees with his chainsaw, and the kids are picking up the pieces and loading them in the truck. They kindly left me to my own devices today, so I’m washing their laundry and changing their sheets, and yes, baking cookies especially for them. There’s also a pot of soup on the stove to warm their innards when they return from battle — er, stacking wood. (Sometimes one must use a little imagination to bring enthusiasm to mundane tasks!)

Peanut Butter Chocolate Chip Cookies
  • 1 cup butter, softened
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2½ cups flour
  • 1½ t. baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups milk chocolate chips
  1. Preheat oven to 375.
  2. Mix together on medium speed: softened butter, peanut butter, sugars and eggs.
  3. Sift together in a separate bowl: flour, soda, baking powder and salt.
  4. With mixer on low speed, slowly add flour mixture to wet ingredients. When combined, stir in 2 cups milk chocolate chips.
  5. Using a small cookie scoop, spoon dough onto cookie sheet. Bake for 10-13 minutes (or until cookies are firm and just beginning to turn golden). Let sit on cookie sheet for two minutes, cool on wire rack.
