Sweet and Savory Chicken Pasta

Sweet and Savory Chicken PastaThis simple pasta dish is full of unique flavor. It combines tender, shredded chicken breast and extra sharp cheddar cheese with sweet peas, raisins and white wine for a creamy, decadent pasta dish. Sweet and Savory Chicken Pasta

Ingredients

  • 3 boneless skinless chicken breasts, cooked until tender and sliced or shredded
  • 1 lb. penne rigate pasta cooked al dente
  • 1 cup frozen peas
  • 1 cup raisins
  • 1 shallot minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/4 cup dry white wine
  • 1/4 cup heavy cream
  • 8 oz. Cabot Artisan Cheddar cheese shredded (or extra-sharp cheddar)
  • kosher salt and freshly cracked pepper to taste

Instructions

  • Boil pasta in salted water until al dente. Drain.
  • In a skillet, saute minced shallot in 1 tablespoon butter.
  • Add olive oil, peas and raisins to the shallots in the skillet. Saute until tender, about 3-4 minutes. Add chicken to the pan, and stir over medium-low heat to combine. Season with salt and pepper.
  • Deglaze with 1/4 cup dry white wine and heat for 2-3 minutes.
  • Add skillet mixture to drained pasta with 1/4 cup heavy cream. Top with shredded cheddar and gently stir to combine.

    All I have wanted is pasta this January. I have had it nearly everyday. This looks great and think I have most everything so it will be next on dinner list!!!! Thanks for sharing. Now to go buy the cream…

      Half and half will work too … or regular milk. The cream just makes it nice and rich. Enjoy!

    Jennifer, this looks awesome! I LOVE adding peas whenever possible, it makes the dish taste good, AND look good! 🙂 YUM.
