Pork Fold-overs with Spinach and Cheddar Stuffing

Pork Fold-overs with Spinach and Cheddar Stuffing
 
Ingredients
  • 5-6 pork top loin chops, sliced thin
  • 6 oz. Cabot Alpine White Cheddar cheese (break into chunks)
  • ½ cup Italian bread crumbs
  • 2 cups packed fresh spinach leaves
  • 1 egg
  • ½ teaspoon kosher salt and ½ teaspoon freshly cracked black pepper
  • Juice of ½ lemon
  • Garlic-infused olive oil (or regular olive oil)
Instructions
  1. Preheat oven to 350 degrees F.
  2. Pulse cheddar cheese and Italian bread crumbs in a food processor.
  3. Add spinach leaves and pulse until finely chopped
  4. Add egg, salt and pepper. Squeeze juice of ½ lemon and combine.
  5. Put 1-2 tablespoons of the mixture on half of the thin-sliced pork chop and fold over, pressing firmly.
  6. Fill each chop and fold. Place in a 9" x 13" glass bake dish that has been coated with cooking spray.
  7. Salt and pepper tops of the pork fold-overs, drizzle with garlic-infused olive oil.
  8. Bake for 30 minutes or until pork is done, or reaches 145 degrees with a meat thermometer.
  9. Allow fold overs to rest for 3 minutes. Serve with roasted vegetables.
Notes
To roast the vegetables that accompany the pork in this recipe, toss asparagus and carrots in a drizzle of olive oil, salt and pepper. Spread onto a baking sheet and roast in the oven with the pork, about 30 minutes.
