Make Pavlova

Pavlova with berriesThis delightful dessert may look complicated, but it’s not! It’s Pavlova — a meringue cake with a light, crisp crust and soft, fluffy inside. To make Pavlova, combine egg whites, caster sugar and vanilla, then beat until stiff peaks form.

Baking pavlovaThe mixture is then turned onto a parchment-lined sheet pan. Bake it for over an hour until the outside is crisp and slightly browned. My son says it tastes like eating a crunchy cloud.

Pavlova with berriesThe Pavlova will crack as it cools — that’s normal. Just before serving, top the Pavlova with fresh berries. There’s something about the tart fruit contrasting with sweet “crunchy cloud” — pure delight!

  • 8 egg whites
  • 2 cups superfine (caster) sugar
  • 2 teaspoons vanilla extract
  • Fresh fruit for topping
  1. Preheat oven to 275 degrees F.
  2. Beat egg whites in the bowl of a stand mixer. When they begin to firm, slowly add sugar and vanilla.
  3. Beat egg white and sugar mixture for about 15 minutes or until egg whites will stand alone.
  4. Scoop meringue onto a parchment-lined bake sheet. Pile it 3-4 inches high in a circle.
  5. Bake for about 60-70 minutes. The meringue will have a slight golden tinge to it when it's done.
  6. Remove from the oven and cool completely before topping.
